If you want even more low-carb lunch ideas, try some lettuce wraps. I usually keep the filling and the salad separate and mix them together when it’s time to eat. You can prepare the filling for these wraps on Sunday for the whole week.

Ingredient Healthy Pasta For Meal Prep Lunches
Confession time: I love soup all year round! It sounds a little strange, but sometimes I feel like eating a nice bowl of soup, even if it’s hot outside. And slow cooker recipes are my favorite because they are so easy to make, and you just throw all the ingredients in the pot and go. I mean, does lunch get any easier than this?
To make the soup in advance, make a batch over the weekend and divide into individual containers; 16 ounce jars work great.
Another option is to freeze parts ahead of time using super cubes. These are handy silicone trays that come in sections so you can fill them with soup and freeze.
Once the soup is frozen, remove the blocks from the tray and place them in a freezer bag. When you are ready to eat, heat the soup on the stove or in the microwave. You can also remove a block the night before and refrigerate to thaw overnight. See my post on freezing soup for more tips.
